  • 2 chicken fillets
  • 2 medium sweet potatoes, peeled and diced
  • 4 cups mixed greens (e.g., spinach, arugula, or lettuce)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt
  • Pepper


  1. Gather Ingredients: Pull up all the ingredients you'll need for your salad.
  2. Cook Chicken (15 min.): Season the chicken fillets with salt and pepper. In a skillet over medium-high heat, cook the chicken for about 6-8 minutes per side or until cooked through. Let them rest for a few minutes, then chop them into bite-sized pieces.
  3. Roast Sweet Potatoes (20 min.): Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with a tablespoon of olive oil, salt, and pepper. Roast them in the oven for about 20 minutes or until tender and slightly crispy.
