For the Chicken Salad:

  • 2 cups cooked chicken breast, diced or shredded
  • 1/2 cup of Greek yogurt (plain, non-fat or low-fat)
  • 2 tablespoons of mayonnaise (optional, for added creaminess)
  • 1/2 cup of cucumber, finely diced
  • 1/4 cup of red onion, finely diced
  • 1/4 cup of red bell pepper, finely diced
  • 1/4 cup of celery, finely diced
  • 2 tablespoons of fresh dill, chopped
  • 1 tablespoon of lemon juice
  • Salt
  • Pepper

For the Sandwich:

  • 6 slices whole-grain bread
  • Lettuce leaves
  • Tomato slices
  • Optional: sliced black olives, feta cheese crumbles

Instructions:

  1. Prepare the Chicken Salad: In a large bowl, combine the diced or shredded chicken, Greek yogurt, mayonnaise (if using), cucumber, red onion, red bell pepper, celery, fresh dill, and lemon juice. Season with salt and black pepper to taste. Mix well until all ingredients are evenly combined.
  2. Assemble the Sandwich: Lay out the slices of whole-grain bread. Place a lettuce leaf on each slice. Spoon a generous portion of the Greek yogurt chicken salad onto half of the bread slices. Add tomato slices and any optional toppings like sliced black olives or feta cheese crumbles.
  3. Complete the Sandwich: Top each sandwich with the remaining slices of bread to create a sandwich. You can also toast the bread for added crunch and warmth.
