Ingredients:

  • 1 pound large shrimp, cooked and peeled
  • 2 ripe avocados, sliced
  • 1/2 cup crumbled feta cheese
  • 2 cups mixed greens (e.g., spinach, arugula, or lettuce)
  • 1/4 cup red onions, thinly sliced
  • 2-3 whole-wheat tortillas
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt
  • Pepper

Instructions:

  1. Gather Ingredients: Pull up all the ingredients you'll need for your wraps.
  2. Prepare Shrimp (5 min.): If the shrimp is not already cooked and peeled, cook it according to package instructions. Season with salt and pepper.
  3. Mix Dressing (2 min.): In a small bowl, mix together olive oil, lemon juice, salt, and pepper to create the dressing.
  4. Assemble Wraps (5 min.): Lay out the whole-wheat tortillas. Place a handful of mixed greens on each tortilla. Toss with cooked shrimp, sliced avocados, crumbled feta cheese, and thinly sliced red onion.
  5. Drizzle Dressing (1 min.): Drizzle the dressing evenly over the ingredients on each tortilla.
