Ingredients:

For the Spicy Lemon Chicken:

  • 2 boneless, skinless chicken breasts
  • Zest and juice of 2 lemons
  • 2 tablespoons olive oil
  • 1 teaspoon chilli powder (adjust to your spice preference)
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For the Herbed Quinoa:

  • 1 cup quinoa, rinsed and drained
  • 2 cups chicken or vegetable broth
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped (optional)
  • Salt
  • Pepper

Instructions:

  1. Marinate the Chicken: In a bowl, combine the lemon zest, olive oil, chilli powder, cumin, paprika, salt, and pepper. Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 15 minutes, or up to 1 hour.
  2. Cook the Quinoa: In a medium saucepan, bring the broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is tender and the liquid is absorbed. Fluff the cooked quinoa with a fork and stir in the chopped cilantro, parsley, and mint (if using). Season with salt and pepper to taste. Keep warm.
  3. Cook the Chicken: While the quinoa is cooking, preheat a grill or a grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-8 minutes per side, or until the temperature reaches 165°F (74°C) and the chicken is no longer pink in the center. Remove from the grill and let it rest for a few minutes before slicing.
  4. Serve: Plate the herbed quinoa and top it with sliced spicy lemon chicken. Garnish with extra fresh herbs and lemon wedges if desired.
