Protein Pancakes

Each of these macro-friendly pancakes contain less than 100kcal per pancake with 10g protein and just under 2g sugar! The secret? Cottage cheese! The addition of cottage cheese boosts the protein content whilst keeping the pancakes moist and fluffy.

Ingredients:

  • 120g oats
  • 2 scoops protein powder
  • 2 eggs
  • 120g cottage cheese
  • 150mL almond milk
  • 1 teaspoon baking soda
  • 1 teaspoon reduced fat butter

Instructions:

  1. In a blender, add oats, protein powder and baking soda and blend until a flour forms.
  2. Then add eggs, cottage cheese and almond milk and blend with dry ingredients until smooth.
  3. Heat a non-stick pan to medium heat and sparingly coat with butter. Add a spoonful of batter to the pan and sit until batter begins to bubble.
  4. Using a spatula, gently flip the pancake and cook until both sides are golden.
  5. Enjoy with your choice of nutritious toppings.
